[Workbench] Sortable column headings (filename, size) in collections#show

Description

Now that the Python SDK doesn't normalize manifests by default (#3706), viewing the output of Crunch scripts in Workbench can appear effectively random, making it harder for users to find what they're looking for. Workbench should support sorting the file view, and probably even do so by default.
